When grinding, it doesn't make any difference in which direction the material is removed. WebAs for tool sharpness, the blades are sharp. I asked someone at the shop to teach me how to sharpen when I got my knives, glove, stone, honing compound and strop (so I am covered!) - and have been stropping frequently. Maybe I will look into a small hand vice. Thanks.
